For individuals managing fatty liver disease, dietary choices play a crucial role in preventing the progression of the condition. Certain starchy foods, particularly those that are highly refined, can significantly impact blood sugar levels and contribute to fat buildup in the liver. Limiting the intake of these foods is essential for maintaining liver health.

Refined grains, such as white rice, white bread, and common pasta, have a high glycemic index because they lack most of their natural fiber and nutrients. The body rapidly absorbs starch from these foods, quickly converting it into sugar and fat, which can overtax the liver.

White rice, a staple in many diets, contains a high amount of starch. Consuming more than two bowls of white rice per meal can cause a rapid increase in blood sugar, which is detrimental to liver health for those with fatty liver disease.

Pho typically contains high salt and calories, while pho noodles made from white rice can cause blood sugar to rise quickly. Eating pho regularly leads to excess energy, easily resulting in weight gain, visceral fat, and liver fat accumulation.

Bread made from white flour is another refined carbohydrate with minimal nutritional value. People with fatty liver should opt for healthier alternatives like brown rice bread or whole-grain dark bread.
