At Vietfish 2025, the company will introduce its smart freeze-drying technology, which allows drying at a wide temperature range (20-80 degrees C). Its rapid drying capability at low temperatures below 30 degrees C helps preserve the nutritional value of high-grade seafood. According to Sasaki, the closed air circulation system allows this technology to save up to 80% of energy compared to pure electrical resistance drying methods, while retaining the natural flavor and color of the product.
Sasaki's smart vacuum drying technology operates in a low-pressure environment, shortening the drying time and maintaining the texture and flavor of the seafood. This is considered an optimal solution for products requiring special sensory standards, such as seasoned squid and peeled shrimp. With smart freeze-drying technology, seafood is frozen at very low temperatures, then the ice is sublimated into vapor. This process helps maintain the shape, structure, and nutritional content of the seafood, extends shelf life, and eliminates the need for additives.
"Thanks to these technologies, Sasaki offers practical solutions focused on drying seafood at low and ultra-low temperatures, helping to preserve Omega-3 fatty acids, high-quality protein, and heat-sensitive vitamins – components easily destroyed by traditional drying methods," a company representative said. "After drying, the product retains its natural color and characteristic flavor without any quality changes, meeting the stringent standards of demanding export markets."
