Upon entering, guests are greeted by the aroma of freshly baked bread. Maison Eric Kayser employs a distinctive sourdough technique, using natural live yeast cultured daily by artisans. This yeast undergoes a slow, 12-hour fermentation process, resulting in bread with a thin, crispy crust, rich aroma, airy texture, and a subtle tang.
