Vietnam House introduces vegetarian menu for Vu Lan season

Vietnam House introduces a vegetarian menu for the Vu Lan season at its two locations, Dong Khoi and Union Square, featuring dishes made from mushrooms, tofu, vegetables, and Vietnamese ingredients, prepared with modern techniques.

At the Dong Khoi - Mac Thi Buoi location, diners can choose individual vegetarian dishes, while the Union Square venue offers a set menu with multiple courses, from appetizers and main dishes to desserts. Both menus utilize ingredients such as mushrooms, tofu, vegetables, and familiar spices.

Specifically, at Vietnam House Restaurant Dong Khoi, the Vu Lan vegetarian menu features three dishes. The stewed termite, reishi, deer horn, and king oyster mushrooms with pepper offer a rich, peppery flavor, served with white rice.

Another highlight is pan-fried tofu stuffed with carrots and wood ear mushrooms; the mashed tofu and dill dish has a light golden crust, a soft filling, and is paired with tomato sauce. Additionally, the sweet corn soup with vegetarian abalone, cordyceps, snow mushrooms, reishi mushrooms, and shiitake mushrooms offers a delicate sweetness, complemented by sesame oil.

At the Union Square location, the menu is designed as a special set menu for the Vu Lan season, beginning with mushroom, vegetable, and cordyceps "Xiao Long Bao" pho. This dish combines a sweet broth with a mushroom filling.

Two appetizers are offered: king's vegetable salad with baby pumpkin, bell peppers, and termite mushrooms, and vegetarian banh khot with Tung Lo mushrooms, green beans, and a delicate coconut cream foam. The salad uses fresh vegetables for a crisp taste, while the banh khot has a crispy shell, combining the nutty flavor of green beans with a smooth coconut cream foam.

For the main course, diners can choose between a vegetable stew served with Haiphong baguette or vegetarian dry pho. The vegetable stew features tender, slow-cooked vegetables, served with warm bread; the dry pho combines pho noodles with vegetables and various mushrooms.

The set menu concludes with jasmine tofu, ginger syrup, and coconut cream, offering a subtle sweetness and ginger aroma.

Developing two menus in two formats allows Vietnam House to explore vegetarian ingredients in different ways. The a la carte menu at Dong Khoi focuses on dishes suitable for a family meal, while the set menu at Union Square is structured sequentially from appetizer to dessert.

The vegetarian menu is introduced during the Vu Lan season, a time when many families choose simple, light meals and gather to remember and express gratitude to their parents.
