Five-star chefs compete to cook dishes with bird's nest

Many chefs from four and five-star resorts and hotels competed to prepare dishes incorporating bird's nest at a culinary festival in Nha Trang, attracting residents and tourists for the experience.

The "Khanh Hoa Bird's Nest Culinary Quintessence 2026" competition took place on 16/7 at Yen Sao Cultural Park in Bac Nha Trang ward. The event brought together 22 teams from four and five-star resorts and hotels across the province to compete.

This competition is one of 40 events celebrating the Khanh Hoa Sea Festival, which runs from 10/7 to 10/8. Organizers anticipate the festival will draw 600,000 to 800,000 domestic and international visitors.

Teams showcased their creativity, presenting two dishes: one savory and one sweet, for four people. The dishes needed to combine bird's nest with local products such as lobster, sea crab, sea cucumber, shark fin, and sea grapes. The organizing committee provided each team with 1,5 million VND and 30g of refined bird's nest sourced from Khanh Hoa's natural bird's nest island. Each team, comprising three members, had 90 minutes to complete their culinary creations.

Among the standout entries, the Yen Sao Restaurant team impressed with their "Ngoc Yen Dao Xanh" (sweet) and "Tuyet Yen Trung Duong" (savory) dishes, notable for their presentation. The savory dish featured a blend of local Khanh Hoa seafood, including Binh Ba lobster, bird's nest, Dai Lanh squid, sea crab, and fresh vegetables. The sweet dish consisted of green jelly and white bird's nest, arranged to symbolize an island, surrounded by tropical fruit juice.

Chef Nguyen Quang Duy from the Hyatt Regency hotel team presented a dessert called "The Egg." This creation combined mango mousse, bird's nest, and coconut jelly, all artfully shaped like an egg. "When preparing, we tried to combine ingredients to ensure a fresh taste while preserving the bird's nest's original flavor", chef Duy stated.

The Victoria Investment Group team also brought two dishes to the competition: "Cuu Long Ngu Yen" and "Thien Yen Ha Thuy." These dishes featured a combination of lobster and bird's nest.

This year marks the 15th bird's nest culinary festival, which has expanded in scale. It features professional chefs from high-end accommodations and resorts. The judging panel includes culinary experts, doctors, artisans, and top master chefs from Thailand, Malaysia, and Vietnam.

Tourists actively participated, experiencing Khanh Hoa's bird's nest cuisine. Hoang Sao, a tourist from Dak Lak, commented that the teams showcased unique and creative culinary artistry, honoring the essence of bird's nest cuisine. "The competition helped me appreciate the nutritional value of bird's nest from Khanh Hoa's natural bird's nest island, and it also contributes to promoting the province's unique cuisine to tourists", Hoang Sao said.
