WooMaster restaurant hosts US Deputy Secretary of Agriculture

Luke J. Lindeberg, US Deputy Secretary of Agriculture, recently visited, worked, and had lunch at WooMaster restaurant at the end of March.

The working session took place as part of efforts to connect and promote agricultural trade cooperation between businesses from both nations. Representatives from the US Meat Export Federation and Vietnamese enterprises in food distribution and culinary services also attended the event.

During the meeting, participants discussed the supply of imported US beef, quality standards, and consumer trends in the Vietnamese market. The agenda also covered opportunities to expand cooperation in the agricultural product supply and distribution chain.

A WooMaster representative stated that being chosen to host the delegation provided an opportunity to showcase the restaurant's products and operational model. A key aspect highlighted by the restaurant is its "wet aging" technique, applied for 14 to 21 days. During this process, meat is vacuum-sealed and stored in a cold environment to tenderize its structure and enhance flavor. After aging, the meat is portioned and prepared before cooking. For serving, steaks are pan-seared at high temperatures and then smoked with oak wood to complete their flavor profile.

WooMaster exclusively uses 100% US imported beef, featuring two primary lines: Kuro Wagyu and Certified Black Angus. According to the restaurant, these beef types offer ideal tenderness, marbling, and flavor, perfectly suited for their preparation methods. Beyond steaks, the menu includes Korean-European style side dishes. Some dishes are prepared directly at the table, served with panchan (Korean side dishes).

The restaurant's interior features both a common area and private rooms, designed in a modern style with dark tones, emphasizing privacy and the diner's experience. The common area suits small groups, while private rooms accommodate meetings, entertaining guests, or organizing business sessions. Some tables are equipped with built-in grills, allowing for direct, tableside cooking. The business aims to combine fine dining with a premium service experience.
