Three food groups not to store long in the refrigerator

Rare meat, lettuce, and undercooked seafood, if improperly stored in the refrigerator, can harbor harmful bacteria, increasing the risk of food poisoning.

Rare foods

Rare or undercooked beef, pork, and seafood carry risks of contamination from E.coli, Listeria, Salmonella, and other pathogenic bacteria. Thorough cooking eliminates most of these bacteria.

To minimize digestive issues, consume rare dishes immediately after preparation. If storage is necessary, refrigerate for no more than one day and reheat thoroughly before eating, according to Very Well Health.

Cooked rice and noodles

Cooked rice left at room temperature for over two hours before refrigeration allows spore-forming bacteria to grow. Health states that improperly stored or reheated rice can increase food poisoning risk from *Bacillus cereus* bacteria. The toxins *Bacillus cereus* produces rapidly cause vomiting or diarrhea.

Therefore, cool cooked rice at room temperature for no more than two hours, then store it in the freezer instead of the refrigerator to prevent spore-forming bacteria from developing.

Cooked noodles stored too long in the refrigerator can swell, become mushy, lose flavor, and easily absorb odors. This starchy food can also allow *Bacillus cereus* bacteria to develop if not stored correctly, increasing the risk of food poisoning.

Salad

According to EatingWell, prolonged salad storage increases bacterial contamination risk. When leafy greens are chopped, plant tissues damage, releasing water and nutrients that foster bacterial growth, especially if not kept sufficiently cold. Raw vegetables can carry pathogens like norovirus, E.coli, Listeria, and Salmonella.

Package and seal raw foods before refrigeration to prevent cross-contamination. Thaw foods in the refrigerator, and label them with the storage date to monitor shelf life and discard expired or spoiled items. The refrigerator compartment should maintain 0-4 degrees C, and the freezer at -18 degrees C or lower. Regular cleaning and disinfection of refrigerators are also essential to ensure food safety.
