Doctor Le Thi Huong Giang, Head of the Nutrition Department at 19-8 Hospital (Ministry of Public Security), stated that pumpkin shoots are primarily water (about 90%) but contain many nutrients beneficial for health.
Specifically, the vegetable contains abundant fiber, which facilitates digestive system function and prevents constipation. Vitamin A supports vision, skin health, and the immune system. Vitamin C and antioxidants help the body combat mild inflammation and boost immunity. Additionally, folate (vitamin B9) is essential for blood formation, making it especially important for pregnant women. Minerals such as potassium, calcium, and iron in pumpkin shoots also support cardiovascular health, bone strength, and blood pressure stabilization.
Pumpkin shoots are low in calories yet promote a feeling of fullness. Healthy adults should consume pumpkin shoots about two to three times per week. For each meal, an appropriate serving is 100-150g of fresh vegetables per person, equivalent to a small plate after cooking. Those needing to increase fiber intake can consume 150-200g, but it should not be eaten all at once in a single meal. Individuals with diabetes can eat them regularly two to three times per week to help control blood sugar.

The World Health Organization (WHO) recommends that each person consume at least 400g of fruits and vegetables daily. However, pumpkin shoots should not be overused, as eating them exclusively can cause bloating and indigestion, particularly in the elderly or individuals with weak digestive systems. Pumpkin shoots are not a "miracle detox" food and cannot replace the functions of the liver or kidneys.
The doctor advises elderly individuals to consume moderate amounts and ensure they are cooked soft for easier digestion. Patients with kidney failure should avoid eating large amounts continuously due to the high potassium content in pumpkin shoots. Those experiencing diarrhea should also temporarily restrict their intake.
To minimize the risk of pesticide poisoning, it is important to select safe vegetables and prepare them thoroughly.
