An open kitchen allows diners to observe the cooking process, from grilling to finishing dishes. Dinner begins with grilled pizza, served with shaved parmesan cheese, balsamic vinegar, and olive oil. According to a restaurant representative, this appetizer fosters a sense of connection among guests, aligning with the restaurant's philosophy of "A Celebration of Us".

Next is a sun-dried tomato salad paired with stracciatella cheese, complemented by the light acidity of white balsamic vinegar and the aroma of basil. This combination enhances the natural flavors of the ingredients. Notably, the dish features tomatoes, cheese, and basil leaves, with colors reminiscent of the Italian flag.

The menu continues with French-style Bouillabaisse seafood soup. This dish impresses with its orange broth, crafted from slow-simmered tomatoes and lobster heads, fresh mussels, fish, and stewed potatoes, creating a rich, traditional-flavored soup.

The highlight of the dinner is the charcoal-grilled dry-aged meat. This dish is prepared from MB4+ beef ribeye and sirloin, featuring marbling interwoven with tender meat, offering a distinct aroma and delicious taste when grilled over hot coals. Additionally, French duck breast, with its honey-brown skin, captivates diners with its tenderness. NOI's head chef also serves the main course with grilled vegetables, mashed potatoes, and a signature pepper sauce for a complete dining experience.

The dinner concludes with tiramisu, made with mascarpone cheese, savoiardi biscuits (ladyfingers), coffee, and liqueur, following a traditional Italian recipe. The cake is dusted with cocoa powder, creating a balance between bitterness and sweetness.

"The Mediterranean spirit at NOI is not only reflected in the dishes but also in the way the space is created for guests to meet, share, and enjoy meals together, transforming an ordinary evening into a memorable experience," a restaurant representative stated.

Located on the 3rd floor of the Union Square building in the heart of TP HCM, NOI - Wood-fired Grill & Bar is a Mediterranean-inspired culinary destination. The restaurant specializes in fresh seafood and premium meats prepared directly over a wood fire, emphasizing a culinary philosophy that focuses on ingredients, where fire elevates natural flavors.
