9 new eateries added to 'Michelin selected' list

From a simple chicken pho stall, a humble banh trang eatery, to a zero-waste vegan restaurant, 9 new establishments on the Michelin Selected list reflect the diverse culinary landscape across Vietnam's three regions.

Restaurants on the Michelin Selected list are chosen based on common criteria: ingredient quality, cooking techniques, flavor balance, chef's personality, and consistency. This year, Michelin recognized 9 establishments in Ha Noi, TP HCM, and Da Nang.

Pho ga Huyen Huong, 20 Bao Khanh, Hoan Kiem ward

According to the Michelin Guide, Pho ga Huyen Huong is a casual eatery specializing in chicken pho with a rich, flavorful broth. Beef pho is also available. Reviewers praised the generous portions and the availability of private rooms for reservations. Due to its small size, customers may experience wait times during peak hours.

Mau Gastro Wine Bar, 5 Van Mieu, Quoc Tu Giam ward

Mau Gastro Wine Bar offers a contemporary dining experience. The restaurant serves both a la carte and chef's menus. Its culinary approach balances modern techniques with Asian flavors, incorporating Vietnamese ingredients. Staff assist guests in selecting suitable wines from their list.

Michelin inspectors note that seating at the bar provides an authentic experience, allowing diners to observe the preparation and presentation of freshly made dishes.

Zao, 4 Ngo Hue, Hai Ba Trung ward

Zao defines itself through contemporary Vietnamese cuisine. The Ha Noi-born chef, with international experience, applies global culinary concepts to local ingredients. Zao's menu features dishes such as tomato bingsu (a blend of cherry tomatoes, buffalo mozzarella, and basil-lime shaved ice), razor clam pate, and salmon with sprouts.

Tales by Chapter, Nguyen Thanh Y street, Tan Dinh ward

This restaurant in TP HCM offers a fully plant-based fine dining experience with seasonal tasting menus. Ingredients focus on local produce and herbs, utilizing fermentation techniques. The beverage menu includes both alcoholic and non-alcoholic wine options. Committed to a zero-waste philosophy, the restaurant repurposes ingredient stems and roots for fermented liquids, while residual pulp is composted. This establishment also received a Michelin Green Star for sustainable gastronomy.

Apero, 45 Nguyen Duy Hieu, An Khanh ward

Apero, which opened in 2022, features a space with large windows that welcome natural light and an open kitchen design. This establishment serves Italian cuisine, with pasta as its signature dish. Michelin recommends trying the carbonara pasta, noted for its creamy sauce, crispy smoked bacon, and parmesan cheese.

NOM, 53 Tran Nhat Duat, Tan Dinh ward

NOM is a creative restaurant serving a tasting menu of reimagined traditional dishes. Each floor of the restaurant's design represents a different region of Vietnam. NOM also became a highlight of this year's awards, receiving the "Opening of the Year Award", a category introduced for the first time in Vietnam.

Sono, Nguyen Van Huong, An Khanh ward

Sono has been operating since 2022 under the direction of chef Phan Kien, offering contemporary European cuisine. Sono's menu focuses on charcoal-grilled dishes, blending modern techniques with local ingredients to celebrate Vietnamese culture. The restaurant provides both a la carte options centered on grilled items and a themed tasting menu. Its beverage list features over 100 wine selections.

Quan an Ngu Binh, 82 Cu Xa Nguyen Van Troi, Phu Nhuan ward

Quan an Ngu Binh is a family-style eatery specializing in traditional Hue cuisine and central Vietnamese specialties. Michelin inspectors recommend trying the banh beo, small steamed rice cakes topped with shrimp, scallion oil, crispy pork cracklings, and served with a sweet fish sauce. The bun bo Hue is noted for its clear, low-fat broth. Grilled spring rolls wrapped in lemongrass are also a popular choice among regular patrons.

Banh trang kep Di Hoa, Da Nang

Banh trang kep Di Hoa is a 31-year-old humble banh trang eatery, the sole representative from Da Nang in the Michelin Selected category. Its signature dishes include two types of banh trang: crispy dry or soft wet, filled with egg pate, dried beef, and fried shallots. A key feature is the thick, spicy chili fish sauce. The menu also offers shredded mango mixed with fish sauce and sugar to stimulate the palate.
